STUFFED BELL PEPPERS
4 large bell peppers (Color of your choice)
Dash salt
3/4 pound ground beef (Feel free to substitute meat)
1/3 cup chopped onion
1 jar RED PONY SALSA
1/2 cup water 
1/3 cup rice
1 tablespoon Worcestershire sauce
1/2  teaspoon dried basil and orgeno, crushed
1/2 cup shredded cheddar cheese (2 ounces)

1. Cut top off peppers, remove seeds and excess ribs.
Immerse peppers in boiling water for 3 minutes. Sprinkle inside with salt (if desired). Set peppers upside down on paper towels to dry well. 
2.In large skillet cook meat and onion until meat is brown and onion tender. Drain off fat. Stire in RED PONY SALSA, water, uncooked rice, Worcestershire sauce, basil and oregano, 1/4 teaspoon salt,1/4teaspoon pepper. Bring to boiling. Reduce heat. Simmer, covered, for 15 to 20 minutes or until rice is tender. Stir in 1/4 cup of cheese.
3. Fill peppers with mixture. Place in square baking dish, making sure the peppers won't tip over.  Bake in 375 degree oven about 15 minutes or till heatedthrough. Sprinkle with remaining 1/4 cup cheese, let melt, enjoy!

Makes 4-6 peppers.



SPICY RAVIOLI AND CHEESE

3 Medium red bell pepper thinly sliced (Green, red & Yellow)
1 Tablespoon olive oil
1 Teaspoon seasoned salt 
1/4 Teaspoon powder garlic
1/4 Teaspoon sugar
1 Package fresh or frozen ravioli
1 Jar RED PONY SALSA
4 Ounces mozzarella cheese shredded or thinly sliced
2 Green onions

Place sliced bell peppers on baking pan. Sprinkle with seasoned salt, garlic powder, and sugar. Broil 15 , minutes or until tender or browned, turning once. Prepare ravioli. Pour 1/2 of salsa into bottom of baking dish. Alternate layers of bell peppers,ravioli,cheese and green onions. Pour remaining salsa over layers. Cover with foil. Bake at 350 degrees for 15-20 minutes or until cheese is melted.

SHRIMP KABOBS

6 Andouille Sausages, cut into slices
1 Fresh pineapple, cut into chunks
1 Pound jumbo shrimp peeled and deveined 
1 Whole red bell pepper
1 Whole green bell pepper
Salt 
Pepper
Garlic
2 Cups RED PONY BLOODY MARY MIX

1. Marinate shrimp in RED PONY BLOODY MARY MIX for an hour or more, or simmer on low heat in medium saucepan for 7 minutes. Once marinated or simmered,
alternate shrimp, sausage, peppers, and pineapple on skewers. Sprinkle with desired seasonings. Can be put on sheet pan and baked at 350 degrees for 20 minutes,turning once, or throw on a grill for 20 minutes, turning once.
